For the Rise
  • 1 teaspoon Baking Powder
For the Berries
  • 2 cups Mixed Berries (fresh or frozen) keep frozen berries frozen before baking

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease the baking dish.
  2. In a blender, combine full-fat cottage cheese and eggs. Blend until smooth.
  3. In a mixing bowl, combine almond flour, sweetener, vanilla extract, lemon zest, and baking powder. Stir until mixed, then fold in cottage cheese mixture.
  4. Gently fold in mixed berries.
  5. Pour batter into the baking dish and spread evenly.
  6. Bake for 35–40 minutes until golden brown and center is set.
  7. Allow to cool for 20–30 minutes before slicing.
