Method
 

Preparing the Dough
  1. In a medium saucepan, combine water and butter. Bring to a rolling boil over medium heat.
  2. Once boiling, add flour all at once, stirring vigorously until the dough forms a smooth ball.
  3. Remove from heat and let cool for about 5 minutes.
Incorporating Eggs
  1. Add eggs one at a time into the cooled dough mixture, beating until smooth after each addition.
Piping the Pastry
  1. Transfer dough into a piping bag. Pipe small mounds onto a lined baking sheet.
Baking
  1. Preheat oven to 400°F (200°C). Bake for 20-25 minutes without opening the door.
Cooling
  1. Remove from oven and let cool completely on a wire rack.
Preparing the Filling
  1. Whip heavy cream with powdered sugar and vanilla until soft peaks form.
