  1. In a large mixing bowl, whisk together the flour, sugar, and salt. Create a well in the center for the wet ingredients.
  2. Crack the eggs into the well and gently beat them, incorporating the flour mixture until smooth.
  3. Slowly add the milk while whisking to achieve a smooth batter with no clumps.
  4. Melt the butter and stir into the batter. Let it rest for about 30 minutes.
  5. Heat a non-stick skillet on medium. Grease lightly with butter or oil.
  6. Pour about 1/4 cup of batter into the pan, swirling to spread it evenly. Cook until edges lift and turn golden brown.
  7. Gently flip the crepe and cook until the second side is golden. Repeat with the remaining batter.
  8. Stack cooked crepes on a plate, covered with a kitchen towel to keep warm until serving.
