  1. Preheat your oven to 400°F (200°C) and prepare your muffin pan with cupcake liners.
  2. In a large mixing bowl, whisk together the melted butter and brown sugar until smooth. Add the egg, vanilla extract, mashed banana, and sour cream, mixing until creamy.
  3. In a separate bowl, combine the all-purpose flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
