- Warm the cooked birria meat and consommé in two small saucepans over low heat for 5-7 minutes.
- Shred the Oaxaca cheese and set it aside. If using, chop cilantro and dice red onion.
- Butter one side of each sourdough slice. Layer half the cheese, then an ample amount of warm birria, and top with remaining cheese. Cover with the other slice.
