Step-by-Step Instructions for Birria Grilled Cheese
  1. Warm the cooked birria meat and consommé in two small saucepans over low heat for 5-7 minutes.
  2. Shred the Oaxaca cheese and set it aside. If using, chop cilantro and dice red onion.
  3. Butter one side of each sourdough slice. Layer half the cheese, then an ample amount of warm birria, and top with remaining cheese. Cover with the other slice.
  4. Preheat the skillet over medium heat and grill sandwiches for 3-5 minutes per side until golden brown and cheese is melted.
  5. Remove sandwiches, slice diagonally, and serve immediately with warm birria consommé for dipping.
