Ingredients

For the Cake
  • 2 cups All-Purpose Flour Can be replaced with a gluten-free flour blend
  • 1 tbsp Baking Powder Vital for fluffy texture
  • 1 tsp Salt Common table salt works just fine
  • 1/2 cup Unsalted Butter Can use margarine if adjusting salt
  • 1 cup Granulated Sugar Brown sugar adds extra moisture if preferred
  • 2 Large Eggs Room temperature eggs yield the best volume
  • 1 tsp Vanilla Extract Opt for pure vanilla if possible
  • 1 cup Buttermilk Can be substituted with milk mixed with lemon juice or vinegar
For the Crumb Topping
  • 1 cup Brown Sugar No substitutes needed
  • 2 cups Frozen Wild Blueberries Frozen works best to prevent a wet batter
For the Glaze
  • 1 cup Powdered Sugar No substitutes are needed
  • 2 tbsp Lemon Juice Freshly squeezed is optimal

Equipment

  • 8x8-inch baking pan
  • mixing bowls
  • electric mixer
  • whisk
  • spatula

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking pan and line the bottom with parchment paper.
  2. In a medium bowl, combine flour, brown sugar, granulated sugar, and a pinch of salt. Add melted butter and mix until crumbly.
  3. In a separate bowl, toss blueberries with flour, granulated sugar, and lemon juice to prevent sinking.
  4. In a large bowl, whisk flour, baking powder, and salt. Cream butter and sugar until fluffy, then add eggs and vanilla.
  5. Alternate adding the dry ingredients and buttermilk; mix just until combined.
  6. Spread half the batter in the pan, layer the blueberry mixture, then top with remaining batter and crumb mixture.
  7. Bake for 60-70 minutes, checking for doneness with a toothpick.
  8. Cool in the pan for 20-30 minutes, then whisk together powdered sugar, lemon juice, and vanilla for glaze.
  9. Drizzle glaze over cooled cake, slice, and enjoy!
