Preparation
- In a small bowl, combine 1 tablespoon of ground cinnamon with 2 tablespoons of granulated sugar and 2 tablespoons of melted butter. Mix until well combined; set aside.
- In a large bowl, whisk together 1 cup of all-purpose flour, 1 tablespoon of baking powder, 2 tablespoons of sugar, and a pinch of salt until well blended.
- In a separate bowl, beat together 1 cup of milk, 1 egg, and 2 tablespoons of melted butter. Pour wet ingredients into dry ingredients and stir gently; mix just until combined.
- Preheat a non-stick skillet or griddle over medium heat, lightly greasing it. Pour about 1/4 cup of batter onto the skillet and swirl in some cinnamon mixture. Cook for 2-3 minutes, until bubbles form; then flip and cook for an additional 2 minutes.
- In a mixing bowl, combine 4 ounces of softened cream cheese with 1 cup of powdered sugar, whisking until smooth. Add milk if needed for consistency.
- Once cooked, pile pancakes on a plate and generously drizzle with cream cheese glaze. Optionally, add fresh fruit or nuts.
