- Preheat your oven to 350°F (175°C) and prepare your muffin tin.
- In a large bowl, mash 2 to 3 ripe bananas and mix in 1/3 cup melted butter.
- Add 3/4 cup sugar, 1 beaten egg, and 1 teaspoon vanilla extract to the banana mixture. Stir until creamy.
- In a separate bowl, whisk together 1 1/2 cups flour, 1 teaspoon baking soda, and 1/4 teaspoon salt. Fold into banana mixture.
- For the streusel, mix 1/3 cup brown sugar, 1/3 cup flour, 1/2 teaspoon cinnamon, and 2 tablespoons melted butter in a bowl until crumbly.
- Spoon the banana batter into muffin tin liners and sprinkle streusel on top.
- Bake for 18 to 20 minutes until a toothpick comes out clean. Let cool in the tin for 5 minutes before transferring to a wire rack.
