- Begin by lightly spraying the inside of your crockpot with non-stick cooking spray.
- In a large bowl, combine shredded cooked chicken, softened cream cheese, ranch dressing, buffalo sauce, and 1.5 cups of shredded cheddar cheese.
- Pour the creamy mixture from the bowl into the prepared crockpot. Spread it out evenly and cover with the lid.
- With just 30 minutes left, remove the lid and sprinkle the remaining 0.5 cup of cheddar cheese on top.
- Once cooking time is up, garnish with crumbled blue cheese and sliced scallions, if desired.
