  • 1 large Egg binds the chicken to the breading
For the Breading

For the Seasonings
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder

  • 1/2 teaspoon Cayenne Pepper adjust for heat level
For the Sauce
  • 3 tablespoons Asian Chili Sauce (Sambal Oelek) main source of heat
  • 1 tablespoon Reduced Sodium Soy Sauce
  • 1 tablespoon Oyster Sauce
  • 2 tablespoons Ketchup
  • 1 tablespoon Honey adjust according to spice preference
  • 1 tablespoon Chinkiang (Chinese Black Vinegar) or substitutes
  • 1 teaspoon Toasted Sesame Oil

Method
 

Step-by-Step Instructions
  1. In a bowl or resealable bag, combine chicken thighs, egg, soy sauce, and seasonings. Marinate for at least 30 minutes.
  2. In a bowl, whisk together chili sauce, oyster sauce, ketchup, honey, vinegar, and sesame oil until combined.
  3. Mix flour, cornstarch, and paprika/cayenne in a resealable bag. Add the marinated chicken, seal, and shake to coat.
  4. In a skillet, heat oil over medium-high heat. Fry breaded chicken for 4-5 minutes on each side until golden and crispy.
  5. Toast cashews in a dry skillet over medium heat for 3-4 minutes until fragrant.
  6. Stir-fry sliced onion and bell pepper in the skillet for 2 minutes until tender-crisp. Add garlic and ginger, stir-fry for another 30 seconds.
  7. Add Dragon Sauce to skillet, simmer for 2-3 minutes to thicken. Toss in fried chicken and cashews until well-coated.
  8. Serve on a platter or individual plates. Garnish with sesame seeds and green onions if desired.
