Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into ¾-inch cubes. Toss with olive oil, paprika, garlic powder, and salt. Spread on a baking sheet and roast for 40–45 minutes.
  3. Heat a tablespoon of olive oil in a skillet. Add diced onion and sauté for 3–4 minutes until soft and translucent.
  4. Add the lean ground beef to the skillet. Break it up and sprinkle in taco seasoning, cooking for 6–8 minutes until browned.
  5. In serving bowls, layer the roasted sweet potatoes, followed by seasoned ground beef, sliced avocado, and a dollop of cottage cheese.
  6. Drizzle hot honey generously over each assembled bowl.
  7. Optional: Garnish with fresh cilantro, red pepper flakes, or lime juice before serving.
