Ingredients

For the Chicken Marinade
  • 2 pounds Boneless Skinless Chicken Breasts Substitution: Chicken thighs can make this dish even juicier.
  • 1/2 cup Honey Dijon Chicken Marinade Tip: Cut back on salt if you're using it in the sauce.
For the Sandwich Assembly
  • 4 pieces Pretzel Buns Substitution: Whole grain or gluten-free buns are great alternatives.
  • 4 slices Swiss Cheese Substitution: Use dairy-free cheese for a lactose-free choice.
  • 4 slices Cooked Bacon Note: You can leave it out for a lighter, yet still delicious, sandwich.
  • Lettuce and Tomato Slices Optional

Equipment

  • grill
  • grill pan
  • small saucepan
  • gallon-sized freezer bag

Method

Prepare the Chicken Cutlets
  1. Slice the boneless skinless chicken breasts in half lengthwise to create thin cutlets and place them in a gallon-sized freezer bag.
Marinate the Chicken
  1. Pour the Honey Dijon chicken marinade into the bag with the chicken cutlets. Seal the bag tightly and massage the marinade into the chicken. Refrigerate for at least 1 hour.
Preheat the Grill
  1. Preheat your grill or grill pan to medium heat, approximately 400°F.
Boil the Reserved Marinade
  1. Remove the chicken cutlets from the bag and pour the reserved marinade into a saucepan. Bring to a boil over medium heat for 5 minutes.
Grill the Chicken Cutlets
  1. Place the marinated chicken cutlets on the grill. Grill for about 8 minutes total, flipping once halfway through.
Assemble the Sandwiches
  1. Layer each pretzel bun with a grilled chicken cutlet, a slice of Swiss cheese, crispy bacon, and drizzle with the cooled Honey Dijon sauce. Add lettuce and tomato if desired.
Serve and Enjoy
  1. Close each sandwich with the top half of the pretzel bun and serve immediately.
