Method
 

Marinade Preparation
  1. In a bowl, combine gochujang, soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper. Whisk until smooth.
  2. Coat the chicken thighs in the marinade, refrigerate for at least 1 hour, or overnight.
Slaw Preparation
  1. Mix together shredded cabbage and julienned carrots in a bowl.
  2. Whisk mayonnaise, lime juice, and sriracha in a separate bowl. Pour over slaw ingredients and toss.
Cooking and Assembly
  1. Preheat a grill pan over medium-high heat.
  2. Cook marinated chicken for 6-7 minutes on each side until charred and cooked through.
  3. Rest chicken, then slice into strips.
  4. Toast the buns until golden brown.
