For the Sauce
  • 2 cups Marinara sauce Opt for low-sugar varieties
  • 2 tablespoons Olive oil Enhances flavor and adds healthy fats
  • 1/4 cup Fresh basil Can be sprinkled fresh or mixed into sauce

Method
 

Step-by-Step Instructions
  1. Prepare the Pasta Shells: Boil salted water, add jumbo pasta shells and cook for 9-11 minutes until al dente. Drain and cool shells.
  2. Prepare the Filling: In a bowl, mix spinach, ricotta, Parmesan, garlic, and egg until creamy and cohesive. Season to taste with salt and pepper.
  3. Stuff the Shells: Fill each pasta shell with the mixture, packing it in. Place shells seam-side down in a greased dish.
  4. Prepare the Sauce: Mix marinara sauce with olive oil and fresh basil. Pour half over the stuffed shells.
  5. Bake the Stuffed Shells: Preheat oven to 375°F. Cover the dish with foil and bake for 25 minutes, then remove foil and bake for another 10-15 minutes until golden.
  6. Serve and Enjoy: Allow to cool slightly, garnish with basil or Parmesan, and serve warm.
