Ingredients
  

For the Rice
  • 2 cups Sushi Rice Wash until water runs clear
  • 2.5 cups Water
  • 0.25 cups Rice Vinegar
  • 2 tablespoons Sugar Adjust based on taste
  • 1 teaspoon Salt Just a pinch
For the Filling
  • 1 fillet Salmon Cooked, can swap with tuna or shrimp
  • 6 ounces Imitation Crab (Surimi) Can use real crab
  • 0.25 cups Japanese Kewpie Mayonnaise Regular mayo works too
  • 1 tablespoon Sriracha Sauce Adjust for spice level
  • 1 tablespoon Soy Sauce Low sodium preferred
  • 1 teaspoon Sesame Oil Can be omitted
For the Topping
  • 1 sheet Nori Sheet Crumble on top
  • 2 tablespoons Sesame Seeds Optional for garnish
  • 0.25 cups Spicy Mayonnaise Mix Kewpie with sriracha
  • Chopped Cilantro (Coriander) or Scallions Optional but recommended

Method
 

Step-by-Step Instructions
  1. Rinse sushi rice until water runs clear. Combine rice with water, boil, reduce heat, cover and simmer for 15-20 minutes. Let it steam for 5-10 minutes after removing from heat.
  2. Preheat air fryer to 400°F. Season salmon with salt and pepper, cook for 10 minutes until it flakes. Flake into pieces after cooking.
  3. In a bowl, mix imitation crab, flaked salmon, mayonnaise, soy sauce, sriracha, and sesame oil gently.
  4. Mix rice vinegar, sugar, and salt until dissolved. Fold into steamed rice without mashing.
  5. Preheat oven to 400°F. Layer seasoned rice in baking dish, add nori crumbles, then crab and salmon filling. Bake for 10 minutes, then broil for 2-3 minutes until golden.
  6. Cool for a few minutes, drizzle with spicy mayonnaise, sprinkle sesame seeds, cut into squares and serve with accompaniments.

Notes
