Preparation and Baking
- Preheat your oven to 350°F (175°C) and grease a 13x9-inch baking pan.
- In a mixing bowl, whisk together eggs, brown sugar, vegetable oil, honey, and vanilla extract until smooth.
- Fold in grated carrots and zucchini, and walnuts if using, being careful not to overmix.
- In a separate bowl, whisk together flour, baking powder, baking soda, and ground ginger.
- Gradually add the dry mixture to the wet ingredients, stirring gently until combined.
- Spread the batter evenly into the prepared baking pan.
- Bake for approximately 25 minutes or until a toothpick inserted into the center comes out clean.
- Remove from oven and let cool completely in the pan on a wire rack, about 1 hour.
- Prepare the frosting by beating together cream cheese, powdered sugar, lemon zest, and lemon juice until fluffy.
- Once cooled, frost the bars and cut into squares for serving.
