Preparation and Baking
  1. Preheat your oven to 350°F (175°C) and grease a 13x9-inch baking pan.
  2. In a mixing bowl, whisk together eggs, brown sugar, vegetable oil, honey, and vanilla extract until smooth.
  3. Fold in grated carrots and zucchini, and walnuts if using, being careful not to overmix.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and ground ginger.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently until combined.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for approximately 25 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from oven and let cool completely in the pan on a wire rack, about 1 hour.
  9. Prepare the frosting by beating together cream cheese, powdered sugar, lemon zest, and lemon juice until fluffy.
  10. Once cooled, frost the bars and cut into squares for serving.
