  • 2 teaspoons active dry yeast Instant yeast can be substituted without dissolving.

  • 1 teaspoon salt
  • 1 cup warm water (110°F) Too hot or cold water can affect rising.
  • 2 tablespoons olive oil
  • 2 tablespoons butter (softened)
For the Filling
  • 3 cloves garlic (minced) Skip for a milder taste.
  • 2 tablespoons dried Italian herb blend Fresh herbs can be used at 3-4 times the amount.
  • 1 cup shredded mozzarella cheese Can substitute with provolone or fontina.
  • 1/2 cup grated parmesan cheese Pecorino or asiago can be used as alternatives.
  • 1/4 cup fresh parsley (chopped)

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine warm water, sugar, and active dry yeast. Stir gently and let sit for 5 minutes until foamy.
  2. Add olive oil, flour, and salt to the yeast mixture and stir until a shaggy dough forms.
  3. Transfer the dough to a floured surface and knead for 6-8 minutes until smooth and elastic.
  4. Grease a bowl with olive oil, place the kneaded dough inside, cover, and let rise for about 1 hour.
  5. Mix softened butter with minced garlic and dried Italian herbs until combined.
  6. Punch down risen dough, roll into a 12x18 inch rectangle on a floured surface.
  7. Spread herb butter over the dough, sprinkle cheese and parsley, then roll tightly and pinch seams.
  8. Place in a greased loaf pan, cover, and let rise for another 30-45 minutes.
  9. Preheat oven to 375°F, bake for 30-35 minutes until golden brown.
  10. Remove from oven, cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
