Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together butter and sugar in a large mixing bowl until light and fluffy, about 3-4 minutes.
  3. Add eggs one at a time, blending well after each, then mix in vanilla and almond extracts.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually mix into the wet ingredients.
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  6. Scoop small portions, roll into balls, make an indentation, and fill with peach preserves.
  7. Roll filled balls in sugar (and optional food coloring) until coated.
  8. Bake for 12-15 minutes or until bottoms are lightly golden, tops should remain soft.
  9. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
