- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together butter and sugar in a large mixing bowl until light and fluffy, about 3-4 minutes.
- Add eggs one at a time, blending well after each, then mix in vanilla and almond extracts.
- In another bowl, whisk together flour, baking powder, and salt. Gradually mix into the wet ingredients.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Scoop small portions, roll into balls, make an indentation, and fill with peach preserves.
- Roll filled balls in sugar (and optional food coloring) until coated.
- Bake for 12-15 minutes or until bottoms are lightly golden, tops should remain soft.
- Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
