Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Prepare baking trays with parchment paper.
  2. In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Add eggs, vanilla extract, and almond extract, mixing until fully integrated.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients.
  5. Cover the bowl and refrigerate the dough for at least 30 minutes.
  6. Shape the chilled dough into balls, making an indentation for the peach preserves.
  7. Fill each indentation with peach preserves and reshape the dough around the filling.
  8. Roll filled cookie balls in granulated sugar and optional food coloring mixture, then place on baking trays.
  9. Bake for 12-15 minutes until lightly golden on the bottoms.
  10. Allow cookies to cool on trays for a few minutes before transferring to a wire rack.
