Preparation
- In a medium bowl, combine the ground chicken, diced red onion, minced garlic, sun-dried tomatoes, baby spinach, chopped dill, dried oregano, kosher salt, and ground black pepper. Mix until well incorporated.
- Divide the mixture into four equal portions and shape each into patties about ¾ inch thick.
Cooking
- Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat. Add the patties and cook for approximately 5 minutes on each side until golden brown and internal temperature reaches 165°F.
Serving
- Let cooked patties rest for a couple of minutes. Assemble on a bun or wrapped in butter lettuce, topped with tzatziki, feta, sliced onion, tomatoes, or avocado.
