For the Patties
  • 1 pound Ground Chicken or ground turkey for a leaner version
  • 1 cup Diced Red Onion or shallots
  • 3 cloves Garlic Cloves minced
  • 1/2 cup Sun-Dried Tomatoes rehydrated
  • 2 cups Baby Spinach or kale or Swiss chard
  • 1/4 cup Chopped Fresh Dill or fresh parsley
  • 1 teaspoon Dried Oregano or Italian seasoning
  • 1 teaspoon Kosher Salt adjust based on dietary needs
  • 1/2 teaspoon Ground Black Pepper freshly ground preferred
  • 2 tablespoons Extra Virgin Olive Oil for cooking
For Optional Toppings
  • 4 leaves Butter Lettuce for wraps
  • 1 cup Tzatziki Sauce homemade or store-bought
  • 1/2 cup Crumbled Feta Cheese
  • 1 medium Sliced Onion red onion preferred
  • 1 medium Sliced Tomato heirloom for extra flavor
  • 1 medium Sliced Avocado

Method
 

Preparation
  1. In a medium bowl, combine the ground chicken, diced red onion, minced garlic, sun-dried tomatoes, baby spinach, chopped dill, dried oregano, kosher salt, and ground black pepper. Mix until well incorporated.
  2. Divide the mixture into four equal portions and shape each into patties about ¾ inch thick.
Cooking
  1. Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat. Add the patties and cook for approximately 5 minutes on each side until golden brown and internal temperature reaches 165°F.
Serving
  1. Let cooked patties rest for a couple of minutes. Assemble on a bun or wrapped in butter lettuce, topped with tzatziki, feta, sliced onion, tomatoes, or avocado.
