For Garnishing
  • 2 tbsp Green Onions Optional; can substitute with chives or omit.
  • 1 tbsp Sesame Oil Optional; omit for a lighter option.

Step-by-Step Instructions
  1. In a medium-sized pot, bring 2 cups of water or broth to a rolling boil over medium-high heat.
  2. Add the chopped kimchi and kimchi juice, along with gochujang and soy sauce. Simmer for about 2 minutes.
  3. Stir in the instant ramen noodles and cook according to package instructions, usually around 3-4 minutes.
  4. While the noodles cook, heat oil in a separate pan and fry an egg sunny-side up.
  5. Once noodles are done, reduce heat, sprinkle cheddar cheese over noodles, and cover to steam for 1-2 minutes.
  6. Transfer ramen into a bowl, top with the fried egg, drizzle with sesame oil, and garnish with green onions.
