- In a large mixing bowl, combine your choice of ground beef or lamb with the grated onion, chopped parsley, minced garlic, cumin, allspice, salt, pepper, and optional cayenne. Mix until sticky, about 2-3 minutes.
- Wet your hands lightly and form the mixture into logs or patties, approximately 4 inches long and 1 inch thick.
- Preheat your grill to medium-high heat (around 375°F / 190°C) or heat olive oil in a skillet until shimmering.
