Preparation
- In a medium mixing bowl, combine chia seeds, almond milk, lemon zest, honey (or maple syrup), vanilla extract, and a pinch of salt. Whisk vigorously for about 1 minute until well-blended.
- Cover the bowl and place it in the refrigerator for at least 30 minutes, or ideally overnight.
- In a separate bowl, whisk together the cold coconut cream, fresh lemon juice, honey (or maple syrup), and additional lemon zest for about 2-3 minutes until creamy.
- Spoon the chia pudding into serving dishes, filling them up to about three-quarters, then dollop the creamy lemon layer on top.
- Chill the assembled pudding in the fridge for about 10 minutes before serving.
