  • 1 teaspoon Dried Oregano or thyme as a substitute
For Seasoning
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Black Pepper adjust to taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F).
  2. Pat the chicken thighs dry with paper towels.
  3. In a mixing bowl, combine olive oil, fresh lemon juice, lemon zest, minced garlic, chopped parsley, dried thyme, and oregano. Add salt and black pepper to taste and stir well.
  4. Generously rub the marinade over each chicken thigh and let it marinate for at least 15 to 30 minutes.
  5. Place the marinated chicken thighs skin-side up in a baking dish.
  6. Roast in the preheated oven for 40 to 45 minutes until the skin is golden brown and reaches an internal temperature of at least 75°C (165°F).
  7. Broil for an additional 3 to 5 minutes for extra crispiness, watching closely to avoid burning.
  8. Let the chicken rest for about 5 to 10 minutes before serving.
