Preparation Steps
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a mixing bowl, combine unsalted butter and granulated sugar. Beat until light and fluffy.
- Fold in chopped culinary lavender, lemon zest, and vanilla extract until well combined.
- Gradually add all-purpose flour and salt to the mixture. Mix until just combined.
- Stir in fresh lemon juice and optional purple food coloring until fully blended.
- Divide the dough in half, flatten into disks, wrap in plastic, and refrigerate for 30 minutes.
- Roll out each disk to 1/4 inch thick, cut into shapes, and transfer to baking sheets.
- Bake for 8-10 minutes, until edges are lightly golden. Cool completely on a wire rack.
- In a clean bowl, combine confectioners’ sugar, heavy cream, lemon zest for filling, and lavender extract until thick.
- Spread filling between two cookies to create a sandwich. Store in an airtight container.
