  • 2 teaspoons Fresh Lemon Juice

  • 2-3 tablespoons Heavy Cream
  • 1 tablespoon Lemon Zest for Filling
  • 1 teaspoon Lavender Extract for filling

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, combine unsalted butter and granulated sugar. Beat until light and fluffy.
  3. Fold in chopped culinary lavender, lemon zest, and vanilla extract until well combined.
  4. Gradually add all-purpose flour and salt to the mixture. Mix until just combined.
  5. Stir in fresh lemon juice and optional purple food coloring until fully blended.
  6. Divide the dough in half, flatten into disks, wrap in plastic, and refrigerate for 30 minutes.
  7. Roll out each disk to 1/4 inch thick, cut into shapes, and transfer to baking sheets.
  8. Bake for 8-10 minutes, until edges are lightly golden. Cool completely on a wire rack.
  9. In a clean bowl, combine confectioners’ sugar, heavy cream, lemon zest for filling, and lavender extract until thick.
  10. Spread filling between two cookies to create a sandwich. Store in an airtight container.
