- In a medium saucepan, combine the double cream, granulated sugar, and a pinch of salt. Stir gently over low heat until the sugar dissolves completely, about 3 minutes.
- Increase heat to medium and stir continuously for 2-3 minutes until the mixture bubbles lightly around the edges.
- Remove from heat and stir in chopped white chocolate until completely melted and smooth.
- Add lemon juice and zest, whisking until combined and the mixture is a pale yellow.
