  • 4 medium Russet Potatoes can substitute with sweet potatoes
  • 2 tablespoons Olive Oil for roasting
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
For the Protein
  • 1 pound Ground Beef or Turkey can substitute with beans or tofu
  • 1 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 medium Red Onion diced
For the Extras
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn Kernels fresh, canned, or frozen
  • 1 cup Cheddar Cheese shredded
  • 1 cup Cherry Tomatoes halved
  • 1 medium Avocado diced
  • 0.25 cup Fresh Cilantro chopped
  • 2 pieces Lime Wedges for serving
  • 0.5 cup Sour Cream optional topping

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Wash and dice russet potatoes into bite-sized cubes.
  2. Toss diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper until well coated.
  3. Spread potatoes in a single layer on a baking sheet.
Cooking
  1. Roast potatoes for 25–30 minutes, tossing halfway through.
  2. In a skillet, cook ground beef or turkey over medium-high heat until browned, about 5–7 minutes.
  3. Stir in chili powder, cumin, and diced red onion; cook for an additional 5 minutes.
  4. Add black beans and corn; heat through for 3–4 minutes.
Assembly
  1. In serving bowls, layer crispy potatoes, followed by meat mixture.
  2. Top with cheddar cheese, cherry tomatoes, avocado, and cilantro.
  3. Serve with lime wedges and a dollop of sour cream.
