Step-by-Step Instructions for Mango Lime Rice
  1. Rinse 1 cup of basmati rice under cold running water until it runs clear to remove excess starch.
  2. Combine the rinsed basmati rice with 1¾ cups of water or vegetable broth and a pinch of salt in a saucepan. Bring to a boil.
  3. Reduce heat to low, cover, and let simmer for 15-20 minutes until liquid is absorbed and rice is tender.
  4. Remove from heat and let sit covered for 5 minutes, then fluff gently with a fork.
  5. Dice 1 ripe mango into small cubes, zest one lime, and juice it.
  6. In a large bowl, combine fluffy rice, diced mango, lime zest, lime juice, chopped cilantro, and oil. Season with salt and pepper.
  7. Serve warm or at room temperature, optionally garnishing with lime wedges and extra cilantro.
