Preparation Steps
- Rinse sushi rice in cold water 4-5 times until the water runs clear.
- Combine rinsed rice with water and a pinch of salt in a rice cooker; cook for about 25 minutes.
- In a bowl, whisk rice vinegar, sugar, and sesame oil until sugar dissolves. Fold into cooked rice and cool to room temperature.
- Spread rice in a lined baking tray, press down gently, cover, and refrigerate for at least 1 hour.
- Cut the chilled rice into bite-sized rectangles.
- Heat vegetable oil in a skillet over medium-high heat. Fry rice rectangles until golden brown, about 3 minutes per side.
- Combine chopped ahi tuna, mayonnaise, sriracha, soy sauce, sesame oil, and lime juice in a bowl.
- Assemble by placing avocado on fried rice squares, topping with spicy tuna, and garnishing.
