Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine sugar, aquafaba, and nut/seed butter. Mix until smooth.
  3. Sift together flour, matcha powder, baking powder, and salt in a separate bowl.
  4. Fold the dry mixture into the wet ingredients until a sticky dough forms.
  5. Scoop and roll dough into 1-inch balls, place on the baking sheet, and flatten slightly.
  6. Bake for 8-10 minutes, until edges are set but centers are soft.
  7. Cool on baking sheet for 5 minutes before transferring to a wire rack.
  8. Optionally drizzle with maple sugar glaze after cooling.
