  2. In a large mixing bowl, combine spinach, feta cheese, grated Parmesan, and flour. Add olive oil, oregano, garlic powder, paprika, salt, and pepper; mix until sticky dough forms.
  3. If using, fold in chopped sun-dried tomatoes until evenly mixed.
  4. Scoop heaping tablespoons of dough onto the baking sheet, flattening slightly with the back of the spoon.
  5. Bake for 15-20 minutes until golden brown around the edges.
  6. Let cool for a few minutes, then transfer to a wire rack to cool completely.
  7. Garnish with fresh herbs before serving.
