Step-by-Step Instructions
- In a large mixing bowl, cream together brown sugar and softened butter using a hand mixer until light and fluffy—about 2-3 minutes. Add egg and mix until combined. Gradually incorporate flour, baking soda, and salt until just combined.
- Gently fold in mini chocolate chips into the prepared cookie dough using a spatula. Let the dough rest for about 10 minutes while you preheat the oven to 350°F (175°C).
- Scoop about 2 tablespoons of dough onto a parchment-lined baking sheet, flatten each scoop slightly for even baking.
- Bake for 10-12 minutes until edges are lightly golden. Cool the cookies on the baking sheet for about 5 minutes before transferring to a wire rack.
- While cookies cool, take out ice cream and let it soften for about 5-10 minutes.
- Once cooled, scoop a generous amount of softened ice cream between two cookies and gently press them together.
- Place assembled sandwiches on a parchment-lined tray and freeze for at least 30 minutes.

Notes
Don't overmix the dough, allow cookies to cool completely before assembling, and use high-quality ice cream for best flavor.
