- Preheat your oven to 350°F (175°C) and lightly grease a 9x5 inch loaf pan.
- In a medium bowl, combine all-purpose flour, light brown sugar, and ground cinnamon for the streusel, then add melted butter until crumbly.
- Whisk together all-purpose flour, baking soda, salt, and ground cinnamon in a large bowl.
- Mash ripe bananas and mix with granulated sugar, light brown sugar, melted butter, eggs, and vanilla in another large bowl.
- Gradually combine the dry ingredients into the wet ingredients; mix until just combined.
- Pour half the batter into the greased pan, sprinkle half the streusel, add remaining batter, and top with remaining streusel.
- Bake for 50-60 minutes until golden brown and a toothpick comes out clean.
- Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
