- Fill a large pot with water, salt it, and bring it to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain pasta and set aside.
- Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until golden brown, about 6-8 minutes.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Lower the heat and pour in heavy cream. Stir in Parmesan cheese and let simmer for 3-5 minutes until thickened.
- Add drained pasta and spinach to the skillet, tossing to combine until spinach wilts.
- Taste and adjust seasoning, serve hot, optionally garnished with more Parmesan.
