Step-by-Step Instructions
  1. Start by chopping your Medjool dates and dried apricots if they are not already in small pieces.
  2. In a spacious mixing bowl, combine the chia seeds, ground cinnamon, and pumpkin seeds. Stir until evenly mixed.
  3. In your food processor, add the chopped Medjool dates and dried apricots. Pulse until it forms a smooth paste.
  4. Once blended, pour the date and apricot mixture into the bowl with the dry ingredients. Mix thoroughly.
  5. Line an 8x8-inch baking dish with parchment paper and transfer the mixture. Press it down firmly to create an even layer.
  6. Place the baking dish in the refrigerator for about 30 minutes to allow the mixture to firm up completely.
  7. Once chilled, lift the bars out using the parchment paper and slice them into desired portions.
