For the Filling
  • 16 ounces Cream Cheese (softened) For a dairy-free version, use dairy-free cream cheese or coconut cream.
  • 1 cups Mango Puree Fresh or canned puree works, or blend fresh mango to create your own.
  • 2 cups Powdered Sugar Adjust according to personal taste preference.
  • 1 teaspoon Vanilla Extract Leave out if making a pure mango variant.
  • 1 cups Whipping Cream (chilled) Use a dairy-free whipped topping if needed.
For the Garnish
  • Mango Chunks (for garnish) Optional but recommended for presentation.
  • Additional Mango Puree (for drizzling) Can be replaced with caramel or chocolate sauce for a different taste.

Method
 

Prepare the Crust
  1. In a mixing bowl, combine graham cracker crumbs, melted unsalted butter, and granulated sugar. Stir until it resembles wet sand. Press into the bottom of a 9-inch springform pan.
Make the Cream Cheese Mixture
  1. Beat cream cheese until smooth and creamy. Add mango puree, powdered sugar, and vanilla extract, and mix until well combined.
Whip the Cream
  1. Whip chilled whipping cream until soft peaks form, about 2–3 minutes.
Combine Mixtures
  1. Gently fold the whipped cream into the cream cheese mixture until combined.
Fill the Crust
  1. Pour the cheesecake filling over the prepared crust. Smooth the top evenly with a spatula.
Chill the Cheesecake
  1. Cover the springform pan and refrigerate for at least 6 hours or overnight.
Garnish and Serve
  1. Once chilled, remove the sides of the springform pan and garnish with mango chunks and additional puree.
