Preparation Steps
- Begin by placing 1 cup of ricotta cheese in a food processor. Pulse the ricotta for about 30 seconds until it becomes smooth and creamy. If you notice any lumps, add a tablespoon of milk or cream and blend again until fully combined.
- Next, drizzle in 2 tablespoons of honey while the processor is running. Mix for another 15-20 seconds to ensure the honey is evenly incorporated.
- Spoon the creamy ricotta mixture into individual ramekins or small serving cups, filling them about three-quarters full.
- Chop a handful of pistachios and sprinkle them over the creamy ricotta in each cup, feel free to add fresh fruit on top.
- Cover the filled cups with plastic wrap or a lid and refrigerate for at least 30 minutes.

Notes
For best results, taste the mixture after adding honey and adjust sweetness as desired. These cups are best enjoyed cold, so refrigerate until serving.
