Equipment

Method

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion, 3 minced garlic cloves, and 1 diced bell pepper. Sauté for about 5 minutes until onion is translucent and bell pepper softens.
  2. Stir in 12 ounces of sliced smoked sausage and cook for an additional 5–7 minutes until sausage browns slightly.
  3. Sprinkle in 2 tablespoons of Cajun seasoning and stir well. Add 8 ounces of uncooked penne pasta, 4 cups of chicken broth, and 1 cup of heavy cream. Mix thoroughly.
  4. Bring to a gentle boil, then reduce to a simmer. Cover and let cook for about 20 minutes, stirring occasionally.
  5. Once pasta is cooked through, remove from heat. Stir in 1 cup of freshly grated Parmesan cheese until melted.
  6. Serve the pasta, and garnish with fresh parsley if desired.
