- Heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion, 3 minced garlic cloves, and 1 diced bell pepper. Sauté for about 5 minutes until onion is translucent and bell pepper softens.
- Stir in 12 ounces of sliced smoked sausage and cook for an additional 5–7 minutes until sausage browns slightly.
- Sprinkle in 2 tablespoons of Cajun seasoning and stir well. Add 8 ounces of uncooked penne pasta, 4 cups of chicken broth, and 1 cup of heavy cream. Mix thoroughly.
- Bring to a gentle boil, then reduce to a simmer. Cover and let cook for about 20 minutes, stirring occasionally.
- Once pasta is cooked through, remove from heat. Stir in 1 cup of freshly grated Parmesan cheese until melted.
- Serve the pasta, and garnish with fresh parsley if desired.
