Step-by-Step Instructions
  1. In a mixing bowl, whisk together ¼ cup of chia seeds, 4 large eggs, 2 cups of milk, ¼ cup of maple syrup, and 1 teaspoon of cinnamon until smooth.
  2. Gently fold in 6 cups of cubed thick bread and 2 cups of chopped fresh peaches into the mixture.
  3. Grease a 9x13 inch baking dish and pour the bread and peach mixture into it, covering tightly with plastic wrap or foil, and refrigerate overnight.
  4. Preheat your oven to 350°F (175°C) the next morning and let the dish sit at room temperature for 15-20 minutes.
  5. Bake in the preheated oven for 45-50 minutes until golden-brown and the custard is set.
