- Wash 6-8 ripe peaches under cool running water. Pit and dice them into small chunks.
- In a saucepan, combine diced peaches, ½ cup granulated sugar, ½ cup water, and 1 tablespoon lemon juice. Heat over medium-low for 10-15 minutes.
- Remove from heat and mash the peach mixture until smooth, then strain through a fine sieve.
- In a small saucepan, combine 1 cup granulated sugar and 1 cup water. Heat until sugar dissolves and cool completely.
- Juice 8-10 medium lemons until you have 1½ cups of fresh lemon juice.
- In a large pitcher, mix the peach puree, simple syrup, and lemon juice. Add cold water to taste.
- Chill the lemonade for at least 30 minutes before serving with ice, garnished with peach slices, lemon wedges, and mint sprigs.
