Method
 

Making the Bites

  2. Using a cookie scoop, portion the mixture onto a parchment-lined tray, shaping approximately six equal-sized round balls. This should take around 5 minutes.
  3. Place the tray in the freezer for 10-20 minutes until the bites firm up enough to hold their shape.
  4. In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in intervals of 15-20 seconds, stirring until melted and smooth, about 1-2 minutes.
  5. Dip each frozen bite into the melted chocolate, ensuring thorough coating. Let excess chocolate drip off.
  6. Return coated bites to the parchment-lined tray and refrigerate for 15-20 minutes to allow chocolate to harden.
