Ingredients
  

For the Shrimp
  • 1 pound Medium Shrimp Peeled and deveined
For the Dressing
  • 1/2 cup Mayonnaise Creamy base for the dressing
  • 1/4 cup Plain Greek Yogurt Adds creaminess and tang
  • 1 tablespoon Fresh Lemon Juice Use fresh for best flavor
  • 1 tablespoon Dijon Mustard Adds tang and complexity
  • 1-2 teaspoons Honey Optional for sweetness
  • 1 tablespoon Old Bay Seasoning Or substitute with seafood seasoning
  • 1/2 teaspoon Kosher Salt Adjust to taste
  • 1/4 teaspoon Black Pepper Freshly ground is best
For the Salad
  • 1 stalk Celery Diced
  • 1/4 cup Red Onion Chopped
  • 2 tablespoons Fresh Dill Chopped
  • 2 tablespoons Fresh Parsley Chopped
  • 4 cups Mixed Salad Greens Your choice of greens
  • 1 cup Cherry Tomatoes Halved
  • 1 cup Cucumber Diced; peel if tough
  • 1 optional Avocado Sliced for serving

Method
 

Preparation
  1. Fill a medium saucepan with water and add a pinch of kosher salt. Bring to a gentle boil.
  2. Add shrimp and cook for 2-3 minutes until pink and opaque. Drain and plunge into ice water.
  3. In a mixing bowl, whisk together mayonnaise, Greek yogurt, lemon juice, and Dijon mustard until smooth.
  4. Chop celery and red onion, and combine with dill and parsley in a large bowl.
  5. Add chilled shrimp and dressing to the vegetables and fold gently to combine.
  6. Refrigerate salad for 30 minutes to allow flavors to meld.
  7. Serve over mixed salad greens, garnished with avocado if desired.
