  • 2 pieces Flatbreads store-bought or homemade
For the Chicken
  • 2 pieces Chicken Breasts can substitute with grilled vegetables
  • 1 tablespoon Olive Oil can substitute with avocado oil
  • to taste Salt
  • to taste Pepper
For the Toppings
  • 1 cup Basil Pesto store-bought or homemade
  • 1 cup Mozzarella Cheese can substitute with provolone or dairy-free cheese
  • 1/2 cup Grated Parmesan Cheese can substitute with Pecorino Romano
  • 1 cup Cherry Tomatoes can substitute with any small tomato variety
  • 1/4 cup Fresh Basil Leaves optional garnish

Method
 

Cooking Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken breasts dry and season with salt and pepper.
  3. In a skillet, heat olive oil and cook the chicken for 6-7 minutes on each side until golden brown.
  4. Let the chicken rest for 5 minutes before slicing it into thin strips.
  5. Spread basil pesto on the flatbreads and arrange the sliced chicken on top.
  6. Sprinkle mozzarella cheese and halved cherry tomatoes on each flatbread.
  7. Sprinkle grated Parmesan cheese and bake for 10-12 minutes until cheese is melted.
  8. Broil for 1-2 minutes for a crispy finish.
  9. Cool for a couple of minutes, slice, and garnish with fresh basil if desired.
