Step-by-Step Instructions for Pesto Grilled Cheese
  1. Preheat a non-stick skillet or griddle over medium heat for about 3–5 minutes.
  2. Spread 1 tablespoon of pesto on one side of each slice of bread.
  3. On two of the pesto-coated slices, place one slice of mozzarella cheese on top.
  4. Layer two slices of fresh tomato on top of the mozzarella cheese.
  5. Top the tomato slices with another slice of mozzarella cheese.
  6. Cover with the remaining pesto-coated slices of bread, pesto-side down.
  7. Butter the outside of each sandwich, using about 2 tablespoons total.
  8. Sprinkle grated Parmesan on the buttered exterior before cooking, if desired.
  9. Carefully place the sandwiches into the preheated skillet, butter-side down.
  10. Let them grill for about 3–4 minutes until golden and crispy.
  11. Flip the sandwiches and grill for an additional 3–4 minutes until golden.
  12. Allow the sandwiches to rest for about 1 minute after grilling.
  13. Slice the sandwiches diagonally and serve warm.
