Step-by-Step Instructions for Pesto Grilled Cheese
- Preheat a non-stick skillet or griddle over medium heat for about 3–5 minutes.
- Spread 1 tablespoon of pesto on one side of each slice of bread.
- On two of the pesto-coated slices, place one slice of mozzarella cheese on top.
- Layer two slices of fresh tomato on top of the mozzarella cheese.
- Top the tomato slices with another slice of mozzarella cheese.
- Cover with the remaining pesto-coated slices of bread, pesto-side down.
- Butter the outside of each sandwich, using about 2 tablespoons total.
- Sprinkle grated Parmesan on the buttered exterior before cooking, if desired.
- Carefully place the sandwiches into the preheated skillet, butter-side down.
- Let them grill for about 3–4 minutes until golden and crispy.
- Flip the sandwiches and grill for an additional 3–4 minutes until golden.
- Allow the sandwiches to rest for about 1 minute after grilling.
- Slice the sandwiches diagonally and serve warm.
