Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and let the salmon fillets sit at room temperature for about 15 minutes.
  2. Place the salmon on a parchment-lined baking tray, pat them dry with paper towels, and season both sides with salt and pepper.
  3. In a medium bowl, combine 2 tablespoons of maple syrup (or honey), 1 tablespoon of Dijon mustard, and the juice of half a lemon. Add 2 minced garlic cloves and 1/2 cup of finely chopped pistachios; mix well.
  4. Spread the pistachio coating evenly over the tops of the salmon fillets.
  5. Transfer the baking tray to the oven and bake for 12 to 15 minutes, until the salmon reaches an internal temperature of 145°F.
  6. Remove from the oven and let it rest for a minute or two before serving.
