  • 3/4 cup unsalted butter at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract can substitute with almond extract
  • 3.4 ounces pistachio pudding mix
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
For the Topping
  • 1/2 cup chopped pistachios for garnish
For the Glaze
  • 1 cup powdered sugar
  • 2-3 tablespoons milk to reach desired consistency

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking pan.
  2. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs, vanilla extract, and pistachio pudding mix, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture.
  5. Spread the batter into the prepared pan and level the top.
  6. Bake for 20-25 minutes or until the edges are golden and a toothpick comes out clean.
  7. Allow to cool completely in the pan on a wire rack.
  8. Mix the powdered sugar and milk to make the glaze, then pour over the cooled bars.
  9. Sprinkle with chopped pistachios and slice into squares to serve.
