Ingredients

For the Beef
  • 1 pound Flank Steak Thinly sliced; sirloin can be a substitute.
  • 1/4 cup Cornstarch Coats the beef for crispy texture.
For the Sauce
  • 1/2 cup Low-Sodium Soy Sauce Rich umami flavor.
  • 1/4 cup Brown Sugar Light or dark; dark gives deeper flavor.
  • 1 tablespoon Fresh Ginger Minced; for best results use fresh.
  • 3 cloves Garlic Cloves Freshly minced for flavor.
For Cooking
  • 2 tablespoons Vegetable Oil Can substitute with other neutral oils.

Equipment

  • Large pan or wok

Method

Step-by-Step Instructions
  1. Slice the flank steak against the grain into thin strips (1/4-inch thick). In a bowl, whisk together cornstarch, soy sauce, brown sugar, ginger, and garlic. Set aside.
  2. For extra tenderness, marinate the beef with soy sauce and a pinch of baking soda for 30 minutes (optional).
  3. In a large pan, heat vegetable oil over medium-high until shimmering (2-3 minutes).
  4. Add marinated beef in batches, stir-fry for 2-3 minutes until crispy, then remove and set aside.
  5. Lower heat, add sauce mixture to pan, simmer for 1-2 minutes until slightly thickened.
  6. Return crispy beef to the pan, stir to coat, heat through for another minute, and serve hot over rice with vegetables.
