  • 8 oz Imitation Crab Can substitute with cooked shrimp or shredded chicken
  • 2 cups Cucumbers Chopped into bite-sized pieces
  • 1 cup Tomatoes Cherry or grape, halved
  • 2 stalks Scallions Chopped
  • 1 each Avocado Diced
For the Dressing
  • 1/2 cup Mayonnaise Light mayonnaise is preferred
  • 2 tbsp Fresh Dill Chopped, or 2 tsp dried
  • 1 tbsp Sriracha Optional, adjust for heat preference
  • 1 tbsp Lemon Juice Adds brightness to the dressing
  • Salt To taste
  • Pepper To taste

Method
 

Preparation Steps
  1. Gather a large mixing bowl and chop the cucumbers, tomatoes, and scallions into bite-sized pieces. Flake the imitation crab gently with a fork. Add the ingredients along with diced avocado into the bowl.
  2. In a separate bowl, combine mayonnaise, fresh dill, sriracha, and lemon juice. Whisk until smooth and creamy.
  3. Pour the dressing over the salad mixture and gently fold together, being careful not to mash the avocado.
  4. Taste and adjust seasoning with salt and pepper as desired.
  5. Cover and chill the salad in the refrigerator for at least 30 minutes before serving.
