- Begin by cutting a ripe watermelon in half, then scoop out the flesh with a large spoon. Aim for about 4 cups of juicy watermelon chunks which you will place directly into a blender. Pulse the blender until you achieve a smooth and vibrant puree.
- Pour the smooth watermelon puree into a shallow glass baking dish. Cover the dish with plastic wrap and place it into the freezer for about 30 minutes.
- After 30 minutes, remove the dish from the freezer. Use a fork to scrape the icy edges of the mixture. Return the dish to the freezer promptly.
- Every 20-30 minutes, repeat the scraping process with the fork for about 2 hours until the granita has achieved a delightful, fluffy consistency.
- When your Watermelon Granita has reached its perfect fluffy state, use a spoon to scoop it into chilled serving bowls. Sprinkle a small amount of freshly grated black pepper over the top if desired.
