- Combine dried cherries, walnuts, honey, and rosemary in a bowl to make the topping.
- Place pieces of Brie on each sweet potato round after roasting.
- Return to the oven for an additional 5–7 minutes until the Brie is melty.
- Top each round with the cherry-walnut mixture while they are warm.
