  • 2 medium Sweet Potatoes Washed, peeled, and sliced into 1-inch rounds
  • 2 tablespoons Olive Oil For roasting

  • 1 teaspoon Black Pepper Substitute with white pepper for a milder flavor
For the Topping
  • 8 ounces Brie Cheese Cut into small pieces
  • 1 cup Dried Cherries Can swap with cranberries
  • 1/2 cup Walnuts Chopped, can substitute with pecans or sunflower seeds
  • 1 tablespoon Honey Can substitute with maple syrup
  • 1 tablespoon Fresh Rosemary Chopped, thyme works as an alternative

Method
 

Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash, peel, and slice the sweet potatoes into 1-inch thick rounds.
  3. Drizzle olive oil over the sweet potato rounds and sprinkle with salt and pepper. Toss well.
  4. Arrange the sweet potato rounds on the baking sheet in a single layer, ensuring space between each round.
  5. Roast the sweet potatoes for 20–25 minutes, turning halfway through until golden and fork-tender.
  6. Combine dried cherries, walnuts, honey, and rosemary in a bowl to make the topping.
  7. Place pieces of Brie on each sweet potato round after roasting.
  8. Return to the oven for an additional 5–7 minutes until the Brie is melty.
  9. Top each round with the cherry-walnut mixture while they are warm.
  10. Arrange on a serving platter and enjoy!
